In the years after we filmed this video, Chang revisited the concept of carrots cooked in carrot dashi, simplifying it down to a four-ingredient dish that my non-cooking single-dad friend makes to impress his girlfriend. (That simple version of the dish was in Issue 9.) This is a product of a more baroque era in Chang’s cooking, but the principles are all there. And the results, while they take a little time to chase down, do impress. —Peter Meehan
