Pizzarium is tiny and unassuming, and located far from the city center, in Rome’s Quartiere Trionfale. It is also home to some of the city’s—and the world’s—finest pizza, which is why Romans and tourists alike jam the place every day. The man behind the pies is Gabriele Bonci, a super-nerd about dough, who wheels out a kaleidoscope of outré toppings to make pizzas that couldn’t come from anywhere but his ovens.
Roman photographer Gabriele Stabile checked in with Bonci to talk about his dough, his toppings, the oven, and his philosophy of pizza.
